My Husband LOVES this recipe, i don’t evneknow where exactley I came up with it, but I believe it was part experimentation and an altered recipe I saw in Cooking Light.
Anyways these are GOOD, Don’t let the spicy throw you off,
they are spicy like (full of spice flaovr) not hot spicy.
This recipe seems to work best with chicken thighs, but you would use breasts if you wanted to.
The type of BBQ rub I used was Arthur Bryants, but really any rub would do.
You will need:
2 tablespoons of brown sugar
2 tablespoons of BBQ Rub
1 tsp of cumin
1 tablespoon of chili powder
1 pack of chicken thighs
¼ cup of honey
Preheat oven to 350
Mix up all your spices in a bowl
Dip chicken thigh into seasoning, pushing down on the chicken to fully get the spices to stick
Make sure to turn the thighs over and coat the back as well
Place on a baking sheet and bake at 350-400 degrees
(depends on your oven, mine gets WAY to hot at 400)
Bake for 25-30 Minutes until chicken is cooked through
Pull chicken out of the oven and while it’s still hot, brush each thigh with honey, don’t be afraid to really pile it on!
And you’re done!!
So juicy, tender and mildly spicy with a hint of sweetness.
